The only hydra I've ever found remotely hard is the hydra at the dark root basin and even then it's just because of the last head. However, there is a tactic that you can use to sever the last head easily with melee.
All you have to do is stand directly behind the corpse with the knight armor set one and wait for it to attack. If the last head hits the water and you hear a splash run to your right to the edge of the lake and time when the head bobs it's head down, if you do it right you can actually hit the head and sever it if you do enough damage.
Completely repeatable tactic too.
