I always take great offense when people claim japanese (or asian) gamers are better than the rest of the world. For some games, like Starcraft, it's true. But that's because it's an organized sport there where players make a lot of money. Start paying gamers as much here and I guarantee we'll be just as good (a few westerners are making waves in the SC competitive world, too, which is a huge accomplishment considering the cultural difference I just mentioned).
As for Dark Souls, I think the difference is who's filming their gameplay, and what for. The japanese exhibit more variety and overall, when I watch their videos, I get the sense that it's purely for entertainment factor. They're half-trolling most of the time; they'll heal multiple times during a fight, etc. Westerners will try to exhibit skill more than being entertaining.
Also, hell, get me a capture card and I'll show you both skill and originality. Japanese players are not automatically better than the rest of the world, or more original, or more clever... Their speed runs are damn impressive, though! But I have no doubt we could match them, if there was as much interest for that in the west as there seems to be in the east (seems to be a healthy speed running competition in Japan. Get some competition started here and we'll match them, for sure.)
